Vegetables, meat, seafood, and rice form the basis of traditional Chinese cuisine. A primary cooking method is sautéing in a wok using soybean oil. This makes the cuisine “light” because soybean oil reaches high temperatures very quickly, requiring only a minimal amount. Since ingredients are finely chopped and stirred constantly, they sear rapidly without absorbing much oil. This flash-cooking method also preserves the nutrients and vitamins.
